Some updates:

Honey rubbed ribs w/ brown sugar, garlic salt and mexican chilli rub.
Pork belly with the same rub as the ribs.
Junior smoking away.

Decided to assemble my second shelf tonight.

Burgers.
Set on High; P0. About 7 minutes or so per side.
Almost done.
Noodles can’t wait to try the burgers as well.

Today I tried a Buttermilk Southwestern Chicken recipe from Bobby Flay’s Barbecue Addiction. I also tried a different temperature cooking the chicken. Started at 375 until breast hit 140 degrees, then put the controller to high for last 30 degrees.
Also made potatoes, 2 different kind of sausages (spicy italian sausage and the other is stuffed with cheese and garlic) and some garlic cloves drizzled with olive oil. The sausages I started at smoke for about an hour. Then took them off about 30 min later when I put the chicken in.
Chicken is getting there.
Chicken done. Skin is nice and crispy.

New igniter came in. It was pretty easy to replace. Thank you to BrianEibner for the tip. Check out his youtube video on replacing the hot rod.
Tested the Junior w/ 1/2 chicken and some pototes. Chicken was rubbed with honey and a brown sugar cajun seasoning. Used the Frogmats for the first time during this cook.
This is where the Junior resides. I can easily view it from my kitchen window.

First smoke……….. (manually started)
Ortech TR-100 installed. Also the Maverick ET-732 in place to monitor bbq temp and food.
4 lb pork shoulder and rack of ribs.
EVERYTHING came out great.

This was suppose to be the maiden voyage of the Junior. However, the igniter (hot rod) was DOA. Called Traeger and a replacement was sent out.

I’ve always been a BBQ fan. After months of reading different forums (The BBQ Brethren, Stump’s Nation, Pelletheads and Three Dogs BBQ blog), I decided to pick up a Traeger Wood Pellet Grill smoker. The Traeger Junior to be exact. I bought the Junior from Bourbon BBQ Hickory Smokehouse.
Here is the Junior with the TDB Hopper Extension. I also decided to replace the 3-speed controller with an Ortech TR-100 digital controller (not in the picture).
